Arrival in Norcia: A Gateway to Umbria 

​​​After an unforgettable stay in Florence, I boarded a direct train to Rome, where our next adventure began. From there, we were picked up for a scenic three-hour drive through the rolling Umbrian countryside to Norcia, a charming mountain town located about 90 miles northeast of Rome. Travelers can also reach Norcia by taking a train to nearby Spoleto and continuing the journey by bus.

 

Nestled in eastern Umbria and framed by the dramatic peaks of the Sibillini Mountains, Norcia is a destination that blends history, tradition, and authentic Italian hospitality. Best known as the birthplace of Saint Benedict, it offers far more than religious significance, with rich culinary heritage and a deep connection to the surrounding countryside. The town is also celebrated for its pristine natural landscapes, making it a haven for both food lovers and nature enthusiasts. Norcia’s recent history is one of resilience, having been profoundly affected by the earthquakes of 2016 and since rebuilt with determination and care. Today, it stands as a powerful example of renewal, warmly welcoming travelers to experience one of Italy’s most authentic destinations.

Upon our arrival, we were warmly welcomed by Federico Bianconi, whose family has been at the heart of hospitality in Norcia for more than 160 years. As the current co-owner of Palazzo Seneca, Federico carries forward a remarkable legacy while championing the preservation and revitalization of the local community. His dedication goes beyond creating memorable guest experiences; it reflects a deep commitment to family traditions, local craftsmanship, and the cultural heritage of Umbria.

Housed in a meticulously refurbished 16th-century palace, the hotel masterfully unites its storied past with modern elegance. Each area highlights regional craftsmanship through hand-forged furniture, historical accents, and carefully selected contemporary details crafted by nearby artisans. Furthermore, the establishment is dedicated to eco-friendly hospitality, utilizing renewable power, eliminating single-use plastics, and prioritizing seasonal produce from the local area.

Palazzo Seneca features 24 individually designed rooms and suites, including four junior suites and an elegant signature suite. Guests can unwind in the intimate wellness center, complete with a sauna, Turkish bath, and jacuzzi, or discover quiet corners like the library's hidden passage.

Discovering Norcia's Historic Heart

 

We had the opportunity to explore Norcia with Federico, who shared fascinating insights into the town’s history and resilience. During our walk, we visited the Basilica of San Benedetto and the historic Portico delle Misure in Piazza San Benedetto, where stone measuring containers once ensured fair trade in the medieval grain market. The square served as both the religious and commercial heart of Norcia, reflecting the town’s carefully organized civic life. From a distance, we also viewed La Castellina, a landmark currently undergoing restoration after the devastating 2016 earthquake. Together with projects like the restored Civico Theater, supported by the Brunello Cucinelli family, it stands as a powerful symbol of Norcia’s ongoing recovery and commitment to preserving its cultural heritage.

The Culinary Capital of Umbria

 

Norcia is widely considered the culinary capital of Umbria and the birthplace of norcineria—the centuries-old tradition of pork butchery that has become a cornerstone of Italian gastronomy. Despite its small population of around 4,000 residents, the town is home to an impressive number of traditional norcinerie, where visitors can sample regional specialties such as Prosciutto di Norcia, wild boar sausages, aged pecorino cheeses, and the region’s prized black truffles.

During our visit, we spent the afternoon wandering through Norcia’s local shops and delicatessens, sampling some of the region’s finest cured meats, artisanal cheeses, and locally produced wines. In a delightfully authentic touch, we even discovered vending machines stocked with regional salumi—a testament to how deeply food culture is woven into everyday life in this gastronomic capital. After a leisurely day of tasting and exploring, we returned to Palazzo Seneca to relax and recharge before dinner.

Vespasia: A Michelin-Starred Culinary Journey

That evening, we experienced the hotel’s culinary crown jewel: Vespasia. A Michelin-starred and Green Star-awarded member of Relais & Châteaux, the restaurant offers a sophisticated interpretation of Umbrian cuisine. It seamlessly blends innovation with environmental responsibility, honoring the region's rich agricultural heritage through a profound respect for local traditions.

Dinner at Vespasia was a true celebration of Umbria’s rich culinary heritage and its exceptional local ingredients. Throughout the evening, we enjoyed regional wines such as Montefalco Rosso and Altomare Vermentino, each reflecting a distinct expression of the Umbrian landscape.

The meal opened with a comforting Norcia lentil soup, a tribute to one of the region’s most treasured ingredients, followed by beautifully braised beef that highlighted the restaurant’s refined yet approachable style. Dessert was equally memorable—Valrhona dark chocolate paired with extra virgin olive oil from Denci Mill, alongside a bright pear and ginger sorbet.

The experience was thoughtfully guided by Chef Fabio Cappiello, an Apulian-born chef who has become a Nursino by adoption. Having grown up within the kitchens of the Bianconi family in Norcia, he has been part of their culinary world for over 15 years. Appointed Sous Chef in 2018, he has also contributed to haute cuisine events across Italy and Asia. Today, he is recognized for his deep knowledge of Norcia’s ingredients, local producers, and traditional flavors, which he interprets with both respect and creativity.

Every course highlighted Vespasia’s philosophy of elevating traditional Umbrian flavors through contemporary techniques. The menu draws inspiration from the surrounding countryside, with seasonal ingredients sourced from local farms, forests, and artisanal producers. Regional staples such as lentils, truffles, acorns, and wild herbs are transformed into elegant dishes that tell the story of Norcia’s agricultural traditions while embracing a modern culinary perspective.

The next morning, we headed to Palazzo Seneca’s welcoming breakfast room, where a generous buffet of freshly baked pastries, seasonal fruits, and regional specialties provided the perfect start to the day. Although the rain kept us from dining on the terrace, the floor-to-ceiling windows offered breathtaking views of the Sibillini Mountains and the hotel’s beautiful garden. The bright and elegant space seamlessly blends nature and comfort, creating a peaceful setting to enjoy a leisurely breakfast. Surrounded by stunning scenery, it was every bit as memorable as the evening before.

Exploring the Timeless Streets of Norcia

 

After breakfast, I set out to explore the quiet streets of Norcia, where centuries-old stone buildings and dramatic mountain views create an atmosphere that feels both timeless and peaceful. As I wandered through town, I became captivated by the ornate door knockers decorating many of the historic homes. These intricate details were once believed to offer protection while also serving as symbols of a family's status, wealth, and heritage. Unsurprisingly, they quickly became one of my favorite subjects to photograph.

Immersive Experiences in the Heart of Umbria

Visitors looking to connect more deeply with the region’s culture can experience the Feste Benedettine, one of Norcia’s most cherished traditions. Celebrated annually in March and August, these festivities honor Saint Benedict, the town’s patron saint, through historical reenactments, medieval parades in period costume, cultural performances, and evocative torchlit processions that bring Norcia’s rich history vividly to life.
